Candy in chemistry? Who’d ever guess? Actually that’s exactly what my students will encounter if my project is funded. As a teacher in a very small, rural school in Kansas I am always looking for ways to get the kids to see that science is all around them in real life. Have you ever thought of your kitchen as a chemistry laboratory? They may look different but when you cook, you use many of the same methods that chemists use in a laboratory. Both cooks and lab scientists measure and combine ingredients. Both heat, cool, shake, and stir their mixtures. They both keep careful track of all the steps they take—the recipe—so that they can repeat the steps later. And when they see changes that have occurred in their ingredients, they both ask, “Why?” When you cook, and eat, matter is being changed. These changes can be either physical or chemical. Cooking is just a series of changes in matter. By supplying my class with double boilers and candy molds, they will be able to experience phase changes as water changes from a liquid to a gas, and chocolate changes from a solid to a liquid, then back to a solid. All recipes (and chemical labs) require proper measurements. With the kitchen scales and candy thermometers the students will be able to make comparisons of the metric and English units, measure out ingredients for cookies, candies, cakes, and pies. With the candy thermometers, specifically, the students will be able to study boiling points, solutions and concentration changes, and be able to make graphs based on temperature changes over time. They will be learning life-long skills as they learn how to make various types of candies, such as peanut brittle, lollipops, truffles, and taffy. These activities also introduce students to the field of food science and the importance of an understanding of scientific principles in everyday life. By supplying the requested equipment, my students will experience chemistry in a whole new lab…the kitchen!
