" Academic integration is the goal. Education needs to make a connection between real life and school work. I teach approximately 200 seventh and eighth grade students Teen Living in a rural, low income community where over 2/3 of the student body receives free or reduced lunch benefits.

This grant would allow my students to combine business practices (running a small business) and restaurant techniques (menu planning, pricing, customer service, cooking, and food presentation) into a student ran “Class Café”.

Without the requested equipment (The Art of Food Presentation DVD, a set of 3 serving trays, plastic serving gloves, and chef’s aprons) this project will not be possible.

With this variety of equipment, experiencing running a small restaurant business will be an actuality. By using business techniques to reinforce the Teen Living concepts the students can relate practical hands-on lessons with their regular classroom environment. Being from a rural community most of the students and their families have limited funds and restaurant dining exposure. If they learn the techniques of presenting food in a “restaurant setting” they can take that knowledge and experience with them and apply it to their future job life during high school and beyond.
